Lox & Bagels" an innovation of New Jersey
There were days when I never knew what am I gonna have for breakfast until I hit the Seven eleven after a sweaty game of tennis with my friend on my day off, It happened to be New Jersey and most densely populated region of desi's, as the Seven Eleven Mexican chick often refers me as no ordinary Indian, cos I always like to hog on food which desi's sans pick!!
And there I was staring at the most appetising golden brown doughnut look a like sandwich with slices of salmon orangish and freshly looking lettuce peeping out, I point out Wish to have 2 of those, and she goes oh the"Lox" and that's when it hit me at point blank, as I recollected vaguely flipping culinary books at Barnes & nobles it had to be the "Lox & Bagels" an innovation of New Jersey and as my luck turned out I am having it at its birth place.
Now why is it called Lox, is it an ally to Gravlax or there is tons of other possibilities,
Let me start with the closest decoding from the Canadian neighbour,
Nova or Nova Scotia salmon, sometimes called Nova lox, is cured with a milder brine and then cold-smoked. The name dates from a time when much of the salmon in New York City came from Nova Scotia. Today, however, the name refers to the milder brining, as compared to regular lox (or belly lox), and the fish may come from other waters or even be raised on farms.
Scotch or Scottish-style salmon. A mixture of salt and sometimes sugars, spices, and other flavorings is applied directly to the meat of the fish; this is called "dry-brining" or "Scottish-style." The brine mixture is then rinsed off, and the fish is cold-smoked.
Nordic-style smoked salmon. The fish is salt-cured and cold-smoked.
Gravad lax or gravlax. This is a traditional Nordic means of preparing salmon. The salmon is coated with a spice mixture, which often includes dill, sugars, salt, and spices like juniper berry. It is then weighted down to force the moisture from the fish and impart the flavorings. It is often served with a sweet mustard-dill sauce.
Other similar brined and smoked fish products are also popular in delis and fish stores, particularly in the New York City boroughs, such as Sable (smoked cod), smoked sturgeon, smoked whitefish, and kippered herring.
As for now my experience with lox was sure splendid and the Philadelphian Cream cheese had upped the anti, and when it comes to understanding what a bagel is ? It tweaks out to different areas far more confusing and with more boundaries to cover that I would do it on another segment at eureka!!!
