Holy Mole !!!


Mexican cuisine has much more to offer than their crispy tostada and nachos; the refried beans and the guacamole all fall into the category of fast foods and doesn't really show the true characteristic of this part of the globe; I was fortunate enough to mingle with a few from different regions of this country; One of them was my massa man Rozantho who introduced me to "Tamales" and Arozz con Lechee ; I call him the massa man just for the simple reason he used to knead a dough of 50 kilos every day with ease.

Later, my best man for the grill was another Mexican this one had an history of his own; He was my favourite Grill chef; He to me was an icon in cooking steaks; He was by far the most versatile in getting the done ness, We had together wandered in some memorable culinary journey's; be it the Puerto Rican or the South Carolinian cuisines we did see a few of Alaskan as well.

During the Mexican Iteanrry; we were destined to find the most amazing of places to saviour sole food of Mexico; He would drag me to the interiors of the islands of Cozumel far from the port with a bit of information from the local
Cab drivers; we were able to locate a jewel; which was serving some genuine and charismatic dishes of the country; Davilla would always say to me that just by looking at the specials he could tell weather the place was all about originality: To him Mole and the tamale are two distinctive items in a menu card which distinguishes it from other restaurants. The more the mole and the variety of tamale the better to dig in. 

Mole is so much more than a sauce; it's an obsession. I speak from personal experience. While mole assumes countless forms, Chocolate-imbued negro style typical to the Oaxacan region of Mexico is what I got to experience the first time.

What is mole ? On stone-grinding a proprietary blend of cacao, nuts, chiles, and herbs until the resulting sauce attains a lush viscosity. The unctuous, roasted flavors are brightened with a gentle drizzle of sour cream, crumbled queso fresco, cilantro, and sesame seeds. All of this blankets the tender protein at the center of the dish: chicken braised for so long it falls apart with the touch of a fork. 

Of course there are many many more verities of this luscious yet adorable apparel which is a marinade and a sauce by itself; Mole to me is an iconic representation of true culture of Mexico, The right blend; the obnoxious blend; the versatile blend; overall a blend which has tons of characteristics from flavour to texture and unique in its own way.
